Chicken and Mushroom Meatballs
3 large onions, cut into thirds
1 large garlic clove
½ teaspoon salt
½ teaspoon black pepper
1lb ground chicken
3 tablespoon grated Parmesan cheese
1 egg, beaten
4 tablespoons olive oil
- Pulse first 5 ingredients in a food processor until vegetables are finely chopped.
- Place chicken and next 2 ingredients in a bowl. Stir in mushroom mixture just until blended.
- Shape into 24 balls.
- Heat oil in a large nonstick skillet over medium heat for 1 minute. Add meatball and cook until brown on all sides, 5 minutes or until desired degree of doneness.
Serve these over spaghetti or on hoagie roll with marinara sauce.
